Where We Come From
Yemeni food is slow food by tradition: stews that bubble in stone pots, lamb that spends the night in a sealed tandoor, bread slapped by hand onto the oven wall. It is the cuisine of mountain weddings and harbour markets — generous, aromatic and made to be shared.
We opened Dar Al Yemen to cook that food without shortcuts. The saltah recipe is our grandmother's. The spice blends are ground in-house every morning. The welcome — insistent, second-helping-pressing — is simply how a Yemeni home receives guests.
The Kitchen
Chef Abdulrahman Al-Hamdani
Raised between Sana'a's old-city souq and his family's hillside farm, Chef Abdulrahman cooked his first wedding saltah at sixteen. He leads our kitchen with one rule: if it wouldn't be served in a Yemeni home, it isn't served here.
